A Simple Egg and Vegetable Fried Rice

 I love eating fried rice a lot.So instead of resorting to eating out all the time, I thought of preparing at home which is a healthier option, so I thought of sharing with all of you …

Ingredients:
  •  2 cups Basmati Rice
  •  2 eggs
  • Ginger
  • 2 pods of garlic
  • 3 Green chillies
  • 1 medium sized onion
  • 1 carrot
  • 1 capsicum
  • 1tsp light soy sauce
  • Pepper Powder
  • 1 chicken stock cube(I have used Maggi Chicken Stock Cube)

Method:

  • Cook rice as 1 cup rice: 11/2 cup water. Add salt and dissolve Maggi cube in water. Don’t take additional water to dissolve Chicken Stock Cube. I cook rice in pressure cooker to make it easier. Keep it aside.

  • Scramble eggs with salt and pepper power and keep this also aside.






  • Chop all the vegetables separately; I have used a chopper for this.








  • Take a kadai and add refined oil.
  • Now add ginger, garlic, green chillies and onion. Sauté for around 30 seconds.
  • Now add chopped Vegetables continue sautéing till all the vegetables are cooked. Add salt and pepper. 
  • Add soy sauce and mix.






  • Add cooked eggs and mix.
  • Add the cooked rice and mix well.
  • Adjust salt and spice to taste.


Points to remember:

  • Always use soy sauce in moderation. As we are using the stock the rice will be flavoured already.
  • Since we are adding salt in rice, vegetables, and soy sauce contains salt, be a bit careful that you do not overdo the salt in the dish.

This fried rice tastes best when served with either ketchup or raita.
